Hoppers

Everyone thinks hoppers are very hard to make. But our recipe takes only 45 min. and it's ready to be tasted.

Things you will need-(for 2 hungry tummies)                             Time-45min.
Rice flour 250g
Yeast 2 ts
Sugar 1ts
Coconut milk
Water
Salt to taste
An egg

Let's get started-
  • Mix flour, yeast, sugar together. Add coconut milk small amount at a time and mix well. When the mixture turn in to a batter cover it with a kitchen towel and let it rise for 45 min. in a warm place. After 45min if the volume hasn't change enough let it stand for 15min. more.
  • Then add salt, egg, and water or coconut milk. This mixture shouldn't be too thick nor runny.
  • Add a spoon full of mixture to a hot oiled wok and coat it by turning the wok. Close it and let it stand for a while. Open the lid and wait until the borders of the hopper turn in to golden color. Now you can remove it from the wok using a butter knife.
  • You can add more salt and water if needed.

Swiss Roll with Nutella

Swiss rolls are very delicious and easy to make and it gives a great impression to your guests. These are great for tea time. So here goes the recipe…

Things you gonna need-                  Time -16 min.
5 medium eggs room temperature
125g sugar
100g flour
25g corn flour
½ tsp. salt
200g Nutella (for the filling)

Let’s get started-
  • In a large bowl add an egg and some sugar, then beat in high speed. Add another egg and more sugar. Continue this till all the eggs and the sugar is added.
  • When the sugar has dissolved and eggs have volume add salt and flour table spoon at a time and continue beating.
  • Finally add corn flour in three portions and beat well. Now your egg must have lot of volume and full of form like.
  • Pour the mixer to a large shallow rectangle tray prepared with a baking paper on bottom( the layer shouldn’t be higher more than 1cm) and bake for 10 min in a 180 C preheated oven.
  • Cutoff the sides of the cake while it’s hot. Then spread the nutella on one side. Roll it tight(nutella stays inside the roll) and cover with baking paper and in foil paper so the air stays in. Refrigerate for at least 3 hours.

* Filling can be differ to your choice. Fruit preserves and cake icing can be good substitutes.

Biryani


No doubt we all know biryani is one of the favorite dishes among all. So we are going to give all of you the recipe to make your own biryani. And here goes the recipe…

Things you gonna need-                  Time -50 min.
2 rice cups
500g chicken cut in to pieces
2 thinly sliced onions
½ tsp. saffron
2 tsp. chili powder
2 tsp. curry powder
5 cloves of garlic
1 inch long ginger
Piece of cinnamon
3 cardamom
3 cloves
½ tsp. black pepper
2 tomatoes
150g green peas
70g raisins
50g roasted cashew nuts
Curry leaves
3 tsp. butter or oil
Salt for taste

Let’s get started-

  • Wash rice and let it soak. Heat the butter and fry onions till it turns to golden color and set aside to drain oil. Then fry raisins and green peas and set them aside.
  • In low flame add curry leaves, garlic, ginger, chili powder, curry powder to the rest of the oil and fry 2 to  3 min. You can add more oil if needed. Then add chicken and black pepper. Cover and cook for 10 min.
  • Add chopped tomatoes, cinnamon, cardamom, cloves, salt and 1 ½ cups of water and cook another  10 min.
  • Set aside ½ cup of gravy and chicken pieces. Add soaked rise to the rest of the gravy and add more salt if needed. Cook in high flame for 1 min. then cover and cook in very low flame for about 15 min. or till the rice is cooked. Now the rice is done.
  • Deep fry the chicken. Then mix fried onions, raisins and green peas with the cooked rice. Serve rice with fried chicken and the gravy.

*For a complete meal serve with deep fried hard boiled eggs and a tomato salad.

Chicken Curry

Now we gonna tell you how to cook chicken in a bit different way.  It is not the usual curry it has a bit unique flavor. For this recipe coriander is a must. Give us your comments on how does it taste good or bad anything is welcome. Things you gonna need-                                  Time-1 1/2 hours.
½ whole chicken
¼ tsp. saffron
1 tsp. black pepper
2 ½  chili powder
1 tsp. salt
2 tbsp. oil
½ tsp. mustard seeds
½ tsp. fenugreek seeds
1 large onion sliced
¾ cumin seeds
4 cloves of garlic in paste
1 cup water
½ cup coconut milk (thick)
1 tbsp. lime juice
Piece of ginger grinded

Let’s get started-
  • Season chicken with saffron, coriander, black pepper, chili powder and salt. Cover and refrigerate for an hour.
  •  Place oil in medium heat and fry mustard , fenugreek, onion and cumin for 3 to 4 min. add garlic, ginger and cook for 2 more min. Then add seasoned chicken and water. Cook it for 20 to 30 min.
  • Then stair in the coconut milk and cook till almost dry. Stair occasionally. In the end add lime juice

Sri Lankan Butter Cake

First of all we are going to teach you how to make a butter cake. That is the first cake everyone bakes. If  you bake this one right the road is clear. Don’t forget to give us a comment after baking it. And here goes the recipe….

Things you will need-                                          Time-35min
Sugar 250g 
Flour 250g
Butter 250g
Eggs 4
Baking powder 2ts
Vanilla 2ts    
Let’s get started-
  • Mix butter and sugar well. Use an electric beater. When it’s well mixed the sugar will be dissolved.
  • Then add egg yolks one at a time and mix it well. Mix baking powder and flour and sift it two, three times. Add flour to the mixture bit at a time while mixing.
  • Beat egg whites separately. When it’s well beaten tend to make peaks. Add vanilla and mix everything together with a spoon. Do it slowly.
  • Put everything in to a baking tray and bake it in 180 C for about 20 minutes. Avoid opening the oven occasionally.
  •  Do the toothpick test inserting a toothpick in to the middle of the cake. If it comes out clean cake is ready. Turn off the oven and let it cool inside the oven with the door open.
